Hi! It’s HUMPDAY! And the best type of weather, ever, for soup!
We’re going out of town soon, and even though we’re running super low on everything, I refuse to go to the store. I’m trying to use the things we already have to make delicious, healthy meals. That way nothing really goes to waste while we’re gone (even though it will only be for a few days- I’m super weird about eating food that was in the fridge while I was away. Its like, no matter what it is, it spoils the second I spend one night out of my house. hahaha!).
A few days ago I made some chicken in my crockpot for salads, tacos, etc. Two packages of chicken breasts last us all week when I shred the meat up and use it in other recipes.
For the chicken:
Place in your crockpot desired amount of chicken (1-2lbs chicken breasts)
1 small jar of organic, tomatillo salsa (or your favorite salsa, I love greeeeeen salsa!)
1/2 onion, sliced in to strips (like you’re making fajitas)
3 cloves garlic, crushed
water to cover
Let that cook all day. Then shred it up and you can use it for whatever you like, but for this particular recipe, its going in to soup.
I know the title says ITALIAN lentil soup. So WHY am I using chicken I made with salsa, you ask? Because I love all things to be spicy. Not hot, but definitely to have a good flavor.
Ok, I love all things to be hot. I buy Cholula in the huge bottle, like every week. I love hot, spicy food!
For this amazing soup, you’ll need about 30 minutes. That’s all!
In a pot, place
desired amount of shredded chicken (I would say I used about 1.5 cups)
1 can organic italian style tomatoes
shredded fresh spinach leaves (maybe 1/2-3/4c)
black pepper and sea salt to taste
garlic powder to taste
crushed red pepper to taste
cover with water or chicken broth
Let this simmer until the lentils are done and the spinach is wilted.
This recipe made enough soup for me to have 2 bowls and freeze the rest. It didn’t stay frozen very long! I made this two days ago. Today I thawed it out and my husband & I had it for lunch!
To make it a little heartier and stretch it a little further, today I added some gluten free, non GMO corn pasta to the soup and a little more water, and red pepper.
It was a hit with the husband. There wasn’t enough left to let the kids sample it. haha!
